Horse jumping advice????

OK, so I have been riding for a few years and have recently started doing sirious jumping. The horse I ride is a 20 year old Thoroughbred. When we start to jump she get really, really frisky and hard to controle. Oh, and sometimes she wont turn and will just try to canter away. Any ideas?
